- 6 oz Grape Tomatoes halved or quartered
- 1 whole English Cucumber do not peel
- 3 stalks Green Onion diced; use tops and main portion
- 0.5 tsp Ground Cumin adjust to taste
- 0.25 tsp ground pepper adjust to taste
- 0.25 tsp Salt adjust to taste
- 0.25 tsp Ground Coriander adjust to taste
- 1 tbsp vinegar white wine vinegar

Instructions
- Coarsley chop the cucumber. Add the diced green onion.
- Season to taste with the spices, salt and pepper. Stir in the vinegar.
- Add the tomatoes and stir to blend all flavors. Let sit at room temperature for about 5 minutes. Keep chilled until served.
- Refrigerated, the salad can be kept for several days.
