  1. Clean any remaining fish scales and bones from the filets. Split them along the natural break. This will let the sections cook more evenly.
  2. Lightly spray the filets with oil. Season both sides with smoked paprika, garlic, and parsley.
  3. Preheat a skillet to medium. Spray with oil then cook the filets until done. The "skinny" pieces will cook quickly -- about 3 or 4 minutes -- and can be kept warm in a covered serving dish.
