Ingredients
- 2-3 sprays non-stick spray oil canola, e.g.
- 0.5 cup onion, coursely chopped yellow or white
- 1 can chopped green chilis = 4.5 oz can
- 1 can black beans drained & rinsed
- 0.5 LB lean ground turkey 93% lean
- 0.5 LB lean ground beef 93% lean
- 0.5 cup water room temperature
- 0.5 cup corn fresh or frozen
- 1 pkgs Taco Mix McCormick's or other
- 1 pkgs Corn Muffin Mix Jiffy, e.g.
- 0.5 cup milk organic 2%, e.g.
- 1 large egg
- 1 tsp vegetable oil canola or other mild-flavored oil

Instructions
Preheat
- Preheat Oven to 400°F. Use non-stick spray to lightly coat an 8x8 casserole (this will be used to bake the pie).
- Preheat a large 10-inch+ skillet on medium heat.
Meat Filling
- Spray the skillet with non-stick spray oil. Then add the onion and sauté briefly until it begins to brown (about 1 minute)
- Next stir in the ground turkey and beef a little at a time, mixing it well with the onion. Continue to cook for about 2-3 minutes, letting the meat brown.
- Add the chopped chilis, black beans and the corn kernels to the meat mixture, stirring to distribute the ingredients.
- Blend the package of Taco mix into the half cup of water. Pour it into the meat mixture. Stir well, cover the pan, then turn the heat down to simmer for about 5 minutes.
Corn Bread Topping
- While the meat mixture simmers, prepare the corn bread topping using 1/2 cup milk, 1 egg and 1 tsp oil. Let the topping sit for a couple of minutes while you prepare the meat for topping.
- Uncover the skillet and remove the meat from the heat. Stir again. Pour the meat mixture into the casserole dish.
- Top the meat mixture with the corn bread mix. Bake on the bottom shelf of the oven for about 15-20 minutes, until the corn bread is cooked.
- Let the pie rest at room temperature for a few minutes before serving.
