Quick-Roasted Turkey Breast

Most of the cooking happens in the InstantPot. Finish up under a broiler to crisp the skin.

Instructions
  1. Rinse the breast and lightly pat it dry.
  2. Test-fit the breast in the pot, compressing the ribs if needed. Set the breast aside.
  3. Place the broth and the steamer insert into the InstantPot.
  4. Spray the breast on all sides with cooking oil spray. Then season with your favorite blend of poultry seasonings.
  5. Put the breast in the pot, cover, and set to pressure cook on high for 35 minutes. Set the "Keep Warm" to 0 minutes.
  6. Let the pressure drop on its own for about 15 minutes. Meanwhile, preheat the broiler to 450.
  7. Finish depressuring the InstantPot. Place the turkey breast onto a broiling pan. Broil for about 5 minutes to crisp the skin.
  8. Use the broth from the cooker to make gravy. Save any leftover broth for soup.
