  1. Do not peel the potatoes. Rinse if needed. Slice potatoes in half. Lightly season with salt and freshly ground pepper. Place them in a covered, microwave-able dish along with about a tablespoon of water. A small rectangular Corning casserole dish with a glass cover works well for this.
  2. Microwave until cooked tender, about 5-7 minutes depending on your microwave’s wattage. Let sit for 2-3 minutes to complete the cooking process.
  3. While the potatoes are still hot, stir in the butter, garlic, parsley and additional salt + fresh ground pepper to taste. Either add one of the Variations below, or microwave the dish another 1 minute and let sit for 1-2 minutes before serving.
Variations
  1. Parmesan: After seasoning, spread the potatoes out in the casserole and sprinkle shredded parmesan cheese on top. Broil for a couple of minutes (or microwave for 1 minute) to melt the cheese and lightly brown the potatoes.
  2. Paprika: Sprinkle paprika (regular or smoked) over the potatoes after adding the garlic, parsley and butter. Microwave for 1 minute.
