Creamy Garlic Chicken Casserole
This is an Instant-Pot ("IPot") recipe using boneless, skinless chicken thighs with garlic, carrots, celery and light cream.
IP = InstantPot. This recipe is a variation of Chicken Marengo, but with lower calories. Serve with microwaved Baby Yukon Gold potatoes, which are only about 60 calories per 3 oz portion.
This recipe takes more prep time and cooking time than most of those I post, but the end result is worth it.
Reasonably quick and easy. You’ll need a 3-4 quart sauce pan, a large (10-12″) skillet, and a meat tenderizing tool.
Uses an Instant Pot (or Pressure Cooker). This recipe can be prepared more quickly with skinless, boneless chicken breasts.
