- 1 pound baby red bliss potatoes
- 1 tbsp Butter
- 1 tsp minced garlic half a frozen garlic cube
- 1 tbsp chopped parsely
- salt & fresh ground pepper to taste

Instructions
- Slice the potatoes in half (or thirds if they are more than 1.5 inches in diameter)
- Put them in a microwaveable covered dish with 1/4 cup of water.
- Microwave on high for about 4-5 minutes, until nearly done. The potatoes should not be too soft or they will mash when they are sautéed.
- Add the butter to a fry pan. If you have one that was used to pre-sear meat for the main course, re-use that pan with its drippings and seasonings for extra flavor.
- When the pan is hot, add the garlic and stir to lightly brown it.
- Drain the water from the potatoes then place them in the pan, cut side down. Sprinkle with salt, pepper, and the parsley.
- Let the "face" of the potatoes cook for a few minutes until they have browned. Flip them over and cook the skin-side for another couple of minutes.
- Serve the potatoes on their own as a side dish or add them into to the sauce of the main course.
