Ingredients
- 1.5 lbs pork chops 4 center-cut, bone-in chops
- 8 oz spicy V-8 juice or regular for a milder dish
- 1 each yellow pepper sliced - keep separate
- 1 each orange pepper sliced- keep separate
- 2 each green pepper sliced- keep separate
- 1 cup onion, coursely chopped keep separate
- 1 tbsp olive oil used in 1 tsp increments (3)
- salt & pepper to taste

Instructions
- Trim excess fat from the chops, and score the edges to prevent them from curling during cooking. Season with ground pepper.
- Preheat a deep skillet. Add 1 tsp of the oil and a dash of salt. Stir fry the green peppers for a couple of minutes then set aside. Let them begin to brown but not wilt.
- Add another 1 tsp of the oil to the pan. Sauté the yellow and orange peppers for a couple of minutes. Set these aside with the green peppers.
- Add the remaining 1 tsp of oil, a bit of salt, and the onion. Sauté for 1-2 minutes, until the onions begin to brown. Add the chops and sear them on each side.
- Continue to sauté the chops(about 2 minutes per side), until about half-cooked.
- Top the chops with the peppers and pour the V-8 around them. Cover the pan, reduce heat to simmer and cook for about 5 minutes.
- Turn the chops. Cover again and cook for another 3-5 minutes, until the chops are done. Cooking time varies with thickness of the pork chops.
- Serve over rice or potatoes.
