  1. Trim excess fat from the chops, and score the edges to prevent them from curling during cooking. Season with ground pepper.
  2. Preheat a deep skillet. Add 1 tsp of the oil and a dash of salt. Stir fry the green peppers for a couple of minutes then set aside. Let them begin to brown but not wilt.
  3. Add another 1 tsp of the oil to the pan. Sauté the yellow and orange peppers for a couple of minutes. Set these aside with the green peppers.
  4. Add the remaining 1 tsp of oil, a bit of salt, and the onion. Sauté for 1-2 minutes, until the onions begin to brown. Add the chops and sear them on each side.
  5. Continue to sauté the chops(about 2 minutes per side), until about half-cooked.
  6. Top the chops with the peppers and pour the V-8 around them. Cover the pan, reduce heat to simmer and cook for about 5 minutes.
  7. Turn the chops. Cover again and cook for another 3-5 minutes, until the chops are done. Cooking time varies with thickness of the pork chops.
  8. Serve over rice or potatoes.
