  1. Preheat oven to 375°F. Clean and rinse the fish. Let it drain in a collander while preparing the stuffing.
  2. Mix stuffing in a small bowl and set aside. Spray the casserole dish with oil.
  3. Chop the seafood up into bite-sized pieces. Season lightly with salt and pepper.
  4. Melt the butter and oil together in a large skillet over low heat. Stir in the minced garlic, parsley and chopped peppers. Turn off the heat.
  5. Add the seafood. Stir to coat with the melted butter-oil-garlic-peppers. Squeeze/sprinkle lemon over the mixture.
  6. Transfer the seafood mix to the casserole dish. Cover with the stuffing mixture then top with Parmesan and a light spray of vegetable oil.
  7. Bake for about 25-35 minutes at 375°F, until the seafood is cooked through.
