Ingredients
- Stuffing Mixture
- 1 cup fine bread crumbs
- 1/2 tsp lemon-herb seasoning
- 1/2 tsp Ground Garlic
- 2 tbsp chopped parsley dried
- 1/2 cup chopped shallots about 3 small shallots
- 1 tsp Crushed Red Pepper optional
- 1/4 cup Grated Parmesan Cheese
- Seafood Mixture
- 3/4 lb sea scallops Raw; rinse well first
- 3/4 lb shrimp Xlarge, raw 20-per-lb size
- 3/4 lb lobster meat uncooked, cleaned
- 2 tbsp melted butter
- 2 tbsp oil olive or canola
- 1 cup peppers red, yellow, green; chopped
- 1 tbsp lemon juice
- 1 tbsp fresh Garlic minced
- salt & pepper to taste

Instructions
- Preheat oven to 375°F. Clean and rinse the fish. Let it drain in a collander while preparing the stuffing.
- Mix stuffing in a small bowl and set aside. Spray the casserole dish with oil.
- Chop the seafood up into bite-sized pieces. Season lightly with salt and pepper.
- Melt the butter and oil together in a large skillet over low heat. Stir in the minced garlic, parsley and chopped peppers. Turn off the heat.
- Add the seafood. Stir to coat with the melted butter-oil-garlic-peppers. Squeeze/sprinkle lemon over the mixture.
- Transfer the seafood mix to the casserole dish. Cover with the stuffing mixture then top with Parmesan and a light spray of vegetable oil.
- Bake for about 25-35 minutes at 375°F, until the seafood is cooked through.
