  1. Heat skillet then spray with oil once the pan is hot. Lightly salt the oil then toss in the watercress and cook quickly, stirring.
  2. Set the watercress aside in a serving dish temporarily. Keep the skillet hot.
  3. Spray the pan with oil again, add a sprinkle of salt then stir in the kale. Cook for about 1 minute then stir in the green onion. Continue to cook for another 1-2 minutes, until the kale is done.
  4. Return the watercress to the skillet, stirring to mix the veggies. Turn off the heat and cover the skillet. Let the veggie mix sit for 1-2 minutes. Season with salt and pepper to taste.
